I promise this tastes better than it sounds. A spinach smoothie in the morning is a great way to get several servings of fruit and vegetables – and it’s portable.
2 handfuls fresh spinach (about 5 oz; can use frozen)
1/2 cup soy milk
1-2 cups frozen blueberries (according to your taste)
2 pitted dates, chopped
2T cocoa (or 1/2 packet Carnation Instant Breakfast)
1/2 cup water
Combine the spinach and soy milk in a blender until smooth – can add more milk as needed, should be liquid consistency.
Add banana and blend. Add blueberries and blend; may need to add water to blend to liquid.
Add cocoa and dates and blend.
